What is Acar?
Acar refers to pickled vegetables found throughout Southeast Asia, with its origins in India, where it’s known as Achaar. In Indonesia, Singapore, and Malaysia, acar typically comprises a simple mixture of cucumbers, shallots, carrots, and fresh chilies pickled in a mixture of vinegar and sugar. Typically served as a condiment, acar is an excellent accompaniment for meat and seafood dishes, though its versatility allows it to complement various other meals. Traditionally, acar is prepared in large quantities and stored in jars.
